Tigers Experience - The Youth Brigade - Mahabelly

Mahabelly By Chance - Yes By Chance - Client meeting got over at the bar next door , had read a few reviews about this new entrant by the Youth Brigade , so landed up there . The Food mall behind DLF Mall in Saket is very interesting corner ,has seen a number of changes ever since it opened , today it has TC Cafe , Rajdhani , BBQ nation etc and Mahabelly .. earlier used to be a food court . The funny part is that i have had two meals there and both i have eaten alone .. i know my nature can never eat alone wonder why Tiger became so greedy all of a sudden and ventured to eat at Mahabelly all alone .. well i did and i loved it . The first time i went was just a couple of beers down hence  had the guts - tho  before entering i called a couple of Mallu friends to accompany me ,but who comes last minute .  Anyway entered only a couple of table occupied . serious mallus feasting , the manager recognized me greeted me and made me feel at home . like always never checked out the menu just blatantly told the manager "Please get me one chicken , one mutton and maybe some beef too " hehehehehehe So what he gets me is chicken roast , erachi (beef)fry and the mutton moplah biryani . And the second time i went was for the greed of the amazing cuisine. 

The ambience nice not very mallu influenced but modern trendy with the touch of youth playfulness , the chairs and tables made from wood from down south ,not very comfortable .. hard wood - need to loose weight i guess, the music thankfully not the typical carnatic drag .. upbeat and nice . The menu simple black n white easy to read an understand , the team small but all there. Quite an simple art gallery with a whole lot of "CurryCreatures ".

So while the order is getting ready i see two lanky looking dudes walking in going to the cashier desk , i understood these are the men behind mahabelly - post reading so much about the Mallu Educated dudes. Anyways i got this opportunity to interact with the these two Stephenians who have ventured into restauranting . Very open to suggestions , super belief in what they are doing , a bit nervous - anyone would be when you have a the axe of the rent hanging on your head . Very creative  and determined .  So Thomas Fenn sat down with me and answered by several questions thru the course of the meal . 

So here is what they have to say about 'Mahabelly'.


The Concept
A specialty restaurant serving authentic Kerala cuisine fuelled by a wide variety of flavours , textures, and tastes. Culinary influences include Syrian Christian, traditional Nair, the Malabar region’s Moplah, coastal cuisines, and the ever famous fare from the toddy shops of Kerala. The restaurant offers an exquisite menu staying true to its traditional roots and heritage that will excite and captivate a South-Indian, local as well as a cosmopolitan audience.
The theme of the restaurant draws its inspiration from Kerala pop culture such as Malayalam cinema, performing arts, traditional lore and artefacts.



Why/How did Mahabelly come about?
Zachariah & I came to Delhi in 2006 to study at St Stephen's College. Over a period of time, we increasingly missed the food that we grew up on and couldn't find a place in Delhi that came close. Sure, there were small shacks in the INA market that served some decent fare, but they weren't places that you could take your family and friends to. There were also a few mid level to high end restaurants that served food from the southern states as a whole rather than specialty restaurants. The idea was perhaps conceived as early as then. Post college we went on to pursue our respective careers, but the idea of an authentic Kerala cuisine restaurant kept niggling at us. It also helped that there was a mini revolution of sorts in the Delhi food scene with new restaurants, concepts and consumers mushrooming all over. The time was ripe.Neither of us had any experience in the F&B industry but we had a clear idea about what the product should be and more importantly what it shouldn't. We figured that starting up something would be a very exciting journey if nothing else. 
A lot of brainstorming, hard work, blind luck and three months later Mahabelly was born.


Regional Cuisine is slowly catching up in Delhi , and high time it did. Education of the foodies is very essential , India has so much to offer and learn from in the culinary bracket that one could spend a lifetime doing so . The idea is to be open to the food , the flavours , cooking styles . Kerala cuisine is found in places like Sarai Jullena , Khari Baoli , RK Puram etc .. and aren't we glad that we have places like Mahabelly now in upmarket areas and more accessible to us foodies . I personally think it is a slow climb for regional cuisine but definitely here to stay .

Thomas Fenn is a graduate from St Stephen's College, New Delhi. He has worked as an Analyst with an infrastructure consultancy Feedback Infra Pvt Ltd for two years before taking over Operations, Marketing & Business Development for the Stellar Children's Museum, Ambience Mall Gurgaon since it's inception in 2012.
Zachariah Jacob is a graduate from St. Stephen's College, New Delhi and completed LL.B from Faculty of Law, University of Delhi. He has been working as Manager (Law) with IFCI Ltd., New Delhi which is a Govt. owned Public Financial Institution since 2012. He is also a Certified Associate of Indian Institute of Banking and Finance (CAIIB).

WOW what a youth Brigade , Educated , Talented , enterprising , visionaries , determined and top it all adventurous .. absolutely amazing . With such backgrounds , getting into the food business and that too in a punju dominated city .. its incredible . Dumping a job for a passion is a wow and then making a success of it is the cream .

Family History in Food
Zachariah's family has a rich history in the food business. His father Jacoby Jacob is a founding partner of Hotel Aida in Kottayam in Kerala with over 30 years of experience in the field of hospitality, food & beverages. The wisdom, support and mentorship that Mr Jacob provided was indispensable in the project especially when it came to defining the business side of things.

Chefs
At Mahabelly, we don't have any celebrity chefs or the like. These are men and women who have put their nose to the grind at small restaurants and cooked their way through.My sister Ann Thomas (who's a home cook herself) took a month off work to help us
conceptualise the menu and standardise the recipes of almost all the items that we serve at the restaurant today. The result is a certain uncanny honesty that we bring to the table.

So while the dishes are cooked homestyle they are the popular dishes one would eat down there in Kerala. They mentioned a word above called standardise - now this is an art ... You have to keep in mind the portions , the cooking time in mind while being in the food business . 

Erachi Double FRY

Outstanding .. actually outstanding , beef well cooked , no smell , amazing coconut flavors , chewy  .The meat so well cooked that it could shred so easily . Have you heard the lastest fad about healthy eating they say coconut oil is the healthiest and one must have a tea spoon of it everyday .. and the mallus are proved right .The dish was a winner and i could see the other two tables also gorging on it .


Chicken Roast
Roast is a crazy word in a foodies dictionary - everyone interprets it differently - the brits , the muslims all do it differently and the  Punjabis also they put a lot of Pyazza in their roast to make a chicken do piyazza  or dry subzi but how this was handled by the chef is just fantastic . Onions well roasted perfect mixed flavors , thick gravy , tangy and robust . hehehehe whatever that means lol . It tasted amazing with the malabar porotta .


Appam & Malabar Porotta

A Special mention here the Malabari Porotta was not the usual , was crisp flaky and yet soft in parts .. wasnt the kadak types which u normally get . The appam was crisp from outside soft from inside .. well done .


Mutton Moplah Biryani
The most talked about Biryani in town , so while the hunt for the best biryanis is going on in the country moplah is one of the very different biryanis i have ever had .. a well cooked mutton preparation hidden well under a bed of rice .. loved the sweetness of the combination . Biryanis are solely related tot he muslim dominance in areas , they tried their own versions with the ingredients available locally and that's the difference in a Moplah Biryani 

Veg Stew
Now this was one dish i was so familiar with and TRUST ME THIS WAS THE BEST STEW I HAVE EVER HAD ..... a touch of pepper , a hint of sweetness ,deliciously flavored with coconut gravy a real to die for dish with a nicely made fresh appam .


Caramelized Banana With Ice Cream

Well well like i said earlier a foodie must have an open mind , I had a picture or rather palate looking for ripe bananas - but what iw as served was almost raw caramelized banana - which were good .. kept the desert together . A Nice try , but shud have ordered a payysam .. silly me .




Need to try their Regular Thaali  and also Specials of the Day - the spread looks very interesting for sure . 

Future
We have our hands full with just one restaurant right now :) Our plan is to consolidate Delhi NCR and then span out.



Tigers Overall Experience with the Youth Brigade .. Keep the good work up and do anything to sustain and scale up Mahabelly , you have a winner on hand . Your food excels , the service needs to be tightened a bit , valet parking needs to enforced , fill up the blank spaces , ass some cafe sort of food for the time pass people and the last thing is make noise to welcome people to try authentic Kerala cuisine .

PS - please call me for breakfast one day i believe your chicken dosa is quite commendable . The advise to other foodies with amazing palates is that be open to discovery , dont have pre conceived notions about the food .. let the senses decide .

Baking Bad - The Youth Brigade Strikes again . 


I love what Woody Allen Said " In the next  Life i want Life to be  backwards - from Death to an Orgasm " 




Following your passion alone cant get you anywhere , you need to test your passion , research it , fund it , collect the right team to have a common passionate story and then you make a success story . And trust this all can only happen when you are unmarried , have a professional degree backing you , a good doze of work ex behind you , the knowledge , the funds and the right people doing haan mein haan .

Baking Bad - the story , from a facebook debate to reality and how . When i told my Mom In Law we are getting pizzas , she was excited and then asked kahan se (from where)? i replied Baking Bad .. she went like ai kee na hai (what kind of a name is this) , and refused to take the name ever after ; the son was excited he connected with the name baking bad , wonder why ? ; wife anyways is a pizza freak and was super excited ; pop in law was excited because the people behind the pizza Company had the same surname as him "Puniani" a rare surname to find within the Punjabi community . And Tiger , never says no to a good offer, specially after reading such good reviews  ... i was fascinated by the Youth Brigade their Charisma , their belief , the professionalism , their go getting spirit . hence had to try their product for the second time and this time it was a huge order .

Background Of the Youth Brigade at Baking BAD :

Baking Bad is the brainchild of 3 partners, Arjun Jaiswal, Saniya Puniani and Sahib Puniani, who share their love for food. Why Pizza? because "what is more desirable, satisfactory and simply yummier than a pizza". 
Previously a pilot with Jet Airways, Arjun Jaiswal quit his “high-flying” job to venture into the food world with one of the first night delivery joints, The Munchbox.
While still pursuing her day job as the Brand Manager with a luxury retail brand, Saniya Puniani co-founded The Munchbox with Arjun Jaiswal. Baking Bad happened when she decided, it was high time to take the plunge and follow her food dream full throttle. 
Sahib Puniani, an MBA from Christ University, was working with a leading food search portal before launching Baking Bad. His experience with the portal, gave him an understanding of the industry, its working and most importantly what “not” to do in setting up a food biz.

Wonder which one of them had the Deep Pockets LOL. :)

The Order / The  Treat 



What made you start a midnight delivery service ?

Having tasted success with The Munchbox, we figured the midnight delivery segment is here to stay. We understood the market quite well, not only because we were in the business, but we are the people who want food at 3 in the night ourselves. Most of the midnight delivery outlets were offering the same kind of food, some better than the others, but still the same. So while were still conceptualizing Baking Bad, all three of us felt a product like ours could really fill this gap. Who wouldn’t like a pizza at night, and that too a thin crust, wood fired and an overloaded pizza!


Going by their answers i really wondered what is the market scope of a mid night delivery ? How many people actually order food at unearthly hours ? who are these people ?  All i analyse is that things have changed and yes there is a demand for mid night food - call centers , people with broken shifts , parties , gamers , party animals returning home ; basically mid night delivery is for the young at heart Lol , no no they deliver from 7 pm to 4 am - hence you guys can also order no worries . They beat the regular commercial pizza places thanks to their personalisation and innovation .. guess there is space for everyone.


How many pizza per day ? And Who Orders?

We sold almost 4000 pizzas last month!!

Depends on the day of week. But weekends are particularly crazy, with non stop orders. However, our patrons are not just the party goers, who need food once the clubs shut down at 1. Maximum orders during weekdays are from 7:30 to 10:30, which goes to say that we are serving food that people enjoy over nice family dinners too. Of late, we have started receiving a lot of bulk orders for house parties as well.

Bandit Green
This was my sons order and boy was he right, delicious to the core - Pesto sauce base with cherry tomatoes ... killer  - a beautiful mix of acidity - cheese , pesto and tomatoes - burst of flavors playing havoc on your palate.. well made pizza .listen eating pesto is an acquired flavor - not many like it for its strong dominating flavors ..  we love it .



Heisenberg
This was ordered for Tiger - Salami, smoked pepperoni, smoked chicken, bacon bits, fresh basil and green chilli - Yes indeed all my favorites on crust made by hand and woodfired . Can actually visualize this pizza being in the oven and the cheese bubbling away on top .. the salami and pepperoni going deeper in colour and my mouth salivating like an animal .. god writing this is driving me crazy - hope someone from baking bad is listening and is going to do something about it NOW. What do you guys think can anything go wrong with this baby .. no way . This was total heaven on earth .


Four Cheese
A serious mood - this pizza was ordered for the full family of 6 - we all love the four cheese pizza . And honestly speaking my test for any pizza company is the Four cheese pizza , you get this right you got it al going for you . Simple pizza with four different flavors riding it , amazing choice i must say . Baking Bad didn go wrong anywhere making this .. kudos Chef Vijay Aryan . Wonderful Plain Cheese pizza loved thoroughly by the bhookad family .Mozzeralla ,Cheddar ,Parmesan and Blue cheese .

Who makes the recipes in the lab?
The recipes and the combination of toppings was joint effort of the three partners along with their head chef, Vijay Aryan.
Come over someday and we shall show you how we experiment .. we have good feedback collection process which constantly updates us about the flavors in demand and we stay alive .

The Boss 
Smoked Pepperoni, Sundried tomatoes with Pesto drizzle - this is the favorite of the Baking Bad Team - thankfully forced on to us ..  normally pepperoni pizza is the most expensive to order and people are reluctant to order , so when they said we are sending you one of ou favorites - i assumed and hoed it was a pepperoni . Well to be honest had a good pepperoni pizza after a long time , checkout the colors , so divine and meaty . I love Pepperoni . 


Falafel Slider & Pork Me Sliders
The Sliders a new concept in the Indian market and i say it is the most sensible thing that has happened to us - they pack four in a box . A great sampler on the side and also a great feast for the small appetite foodies . Saniya will hate me for this but i did not like the Falafel Slider a bit too dry for me - but she fought me and said but "it is the largest selling " i was like ok wil try it again saniya hehehheheheheheh. But the Pork Slider - hey bhagwan was a killer - the pork beautifully pulled and mixed with the bacon jam , juicy meaty  - hmmmmmm  in short heavenly . I wil go back again again for this one .

Check out the mean Slider , Pulled pork caramelized onions in bacon jam OMG situation .Cant handle the salivating me anymore . Is it a Slider or a Sider ?

How often do you innovate the recipe , trials etc ? 
Its an ongoing process. There is never a dull moment in the Baking Bad lab!
Which is the largest selling ?
Heisenberg is one of the most popular pizzas, followed by Hot Spot (veg and non veg). 

Baked New York Cheese Cake
Leave the family aside for the time being they are totally FED UP hehehehehehehe; I love the Cheese Cake , I just go mad over cheese cake and the original one not the fancy flavored ones .. the lemon cheese cake is divine . Creamy lemony slightly baked that is the New York Baked Cheese cake . I tried doing a research on why New York but cudn really dig out much info , will dive deeper post eating the is mean desert.

Delivery and Packaging
Now this is the second element of judging a mid night delivery service The Order taking and  The Delivery - Perfect . Order taking no comments as Saniya was helping me with it , but delivery 40 mins meant 40 minutes .. the man was at the door step , don our lab was there to receive him along with tiger . Ok lemme tell you the families reaction when i told the family im ordering pizza from Baking Bad - the name story i told you up there , the delivery funda - they were like forget it yaar they will keep us waiting and we will starve and start fighting , no one delivers on time and secondly they will get cold and not edible etc etc etc , the rants carried on . but anyway i did convince them and we did order and trust me the delivery was prompt , the pizza stil nice and warm . Cherished .

The Pizza Mercenaries on the JOB hehehehehehe No comments ,let them enjoy . There is no love better than the love for FOOD and eating together .



What is the future plan ?
We wish to go pan India very soon ! 
Delhi/NCR should also be getting a few Baking Bad restaurants !

Besides pizzas, we also have a range of sliders. You could choose from Thai flavoured duck or pulled pork or the good old chicken. For the vegetarians, the Falafel and Mexiteer(Kidney bean patty) simply can’t be missed. Packed with flavour and garnished with our in-house dips, sliders are a welcome alternative to the messy burgers.

Tigers Overall Experience : I made new friends - The Youth Brigade , i could smell Teen Spirit ,yes The Concept and they are here to Stay For sure . A good product backed by a good logistics team is a real winner .  Way to go Team baking bad . Guys for what all areas they cover , etc etc please call them , sorry . For any Pizza shop i judge the Pizza on Three parameters - The Crust , The Sauce , The Toppings . And how i do it is i take a slice scrap all the stuff on top separate them and eat each one individually to absorb and understand they flavors and then decide how good the pizza is . They Passed .

Sshhhhhhhhhhh  a secret - The Leftovers were cut and toasted in the regular toaster for breakfast with eggs .. yumm  try it .

Tigers Experience - The Youth Brigade -Spork & Spoke , Satyaniketan , New Delhi



This is the first of my YOUTH BRIGADE  #youngatfood collection. Just love the way the youth are taking over business , love the way they, the educated breed is getting into entrepreneurship , not scared, not challenged but determined to try  out life as a restaurant owner. They amaze the industry , they keep the stalwarts on their toes with the new concepts , science of cuisines they offer to the customers , they cater to the audience which would matter the most in the coming years , they are the catalyst to change for the industry . 

The questions i am studying are - are they passionate ? Are they in it for the fly by night feeling of business ? Do they get into restauranting for the easy money ? Are they carrying ahead the legacy put together by their fore fathers ? Will they be able to retain the glory of the past ? would they be able to carry the recipes ahead ? Could do a thesis on this . 


What came out of my first study was that yes they are passionate , they are educated , mildly experienced , determined , experimentive and dead serious . Spork and Spoke is one such baby in the restaurant business .





Spork and Spoke - Satya Niketan - What a buzz this place has i think it has two colleges , an mountaineering institute and other educational institutions , it has PG 's Hostels and residents staying in abundance . From 8 in the morning to late at night it is flooded with the youth in all shapes and sizes hehehehe. a treat to be there. Quite similar to hudson lane in DU . Good decision to opne a restaurant cafe in this area , challenging also as there is good competition. May the best win .

Kunal & Hitesh
Kunal - Worked in the kitchen with the following hotels a. Hyatt regency, new delhi b. Hyatt regency, jacksonville riverfront (Trellesis) c. Le Meridien,new delhi (The One)

Hitesh -  Worked with Le Meridien as a trainee for 6 months in all major department (F&B service, F&B production, Housekeeping, Front Office) , Worked with Hospitality Solution(A company based in Noida which provide everything to hotels or restaurants except cement & steel) as a procurement executive ,  Worked with Asian Haus(Foodcraft India Pvt Ltd) for 1.5years as a Manager(Operations)..

Kunal-Comes from a Business family where we setup biotech , micro bio labs in school colleges and industries and helping science grow.

Hitesh- Comes from a joint family(Ladwa, Haryana). Dad worked in italy for 22 years (Now settled in India with a small business), Mom Housewife, Elder sister(Post Graduate M.C.A. Preparing for bank P.O. exams), Elder Brother(Works in Germany, Stuttgart) (All in one put all the savings & loan frm bank to open Spork & Spoke)


Kunal - F.H.R.A.I - I.H.M which was affiliated with Ecole hotelier de Lussane, Switzerland

Hitesh - MMIHM(Maharishi Markandeshwar University which is a Demmed university 

Chef Dipesh
Dipesh comes with 15 years of experience , the guy doesn't look that old wonder what age he entered the kitchen , but he does a remarkable job for a multi cuisine outlet like this . I loved the team all wearing nice new uniforms totally enthu about the jobs , beaming away .. lovely feeling Kunal and Hitesh .

Trendy Interiors
Easy to understand interiors , unassuming , comfortable ,self designed , imaginative , bright , spelling out the spirit of  youth in every corner.  Loved the energy these guys have put into the restaurant . Surely the youth brigade is taking over .



The Menu
Before the Class , Middle of the Class , Lunch Break , Soota Break , Date time ans then Dinner time . Thats how the menu has been designed .  Its a carefully designed menu based on research done by the two wit the students .. basically they have incorporated What the College students like to eat at different times ..  

Khao Suey


Kunal has a Burmese connect in the family and this was their home style Khao Suey . he spoke with so much confidence about it , really impressed me . Normally people copy and fumble when you cross check ingredients with them on the khao suey , but my friend kunal had it all engraved into him by his mom . she apparently cooks the fish and sends to the restaurant everyday .. nicely done gravy .

Keema Pao
The boys are so proud of this that as i sat down to eat they both insisted i tried the keema pao as it is the most popular dish of the eatery .. and they both pounced on to me together "Sir . First try the keema pao" heheheheheheh and yes nice spicy chatpata keema pao. and now i know why it is a hit with the Junta of the colleges .

Thai Red Curry 
Dipesh rules .. his experience in the Eastern kitchens was well showcased with this dish .. brilliant red curry , loved his plating .. totally well balanced thai curry in a hurry .


Atho
Yet again a recipe from Kunals home .. the street food of Burma ATHO a very basic dish i last had was in Chennai .. yes Chennai hehehehehehe . thick noodles tossed in veggies , coconut gravy,  topped with peanuts .. it is indeed yum . The Burmese have another dish called Letto which is similar but made with rice .This is a hit with the youth.

Chicken Curry their way
Now this one has a story and trust me a good story .. i had finished eating and relishing all the above dishes .. suddenly this young friend of mine Hitesh comes with the chef Dipesh and says wil you not try our chicken curry , I was like bas bhai bas cant eat more .. they insisted so i gave in . Sorry about the pictures phone screwed up . But trust me it was the best dish of the meal .. A bsic chicken curry , with a hint of butter chicken , a hint of daal makhni .. yes all o f the gorgeous flavors in one chicken curry served with simple steamed rice ... it was truly fantastic and definitely worth killing yourself for . 


Chokolava Cake
This is Kunal's baby a trained pastry chef aur kya karga .. i was zapped when they told me the spoon is also made of chocolate .. made my life a bit tough .. had to eat the warm desert like in speed before the spoon also melted .. and yes i managed . Great chocolava cake by kunal a must try .

They Care
What a lovely gesture .. flavored water , a hand sanitizer (free of cost ) shows their concern for hygiene and also that they care . Great idea Hitesh and kunal. They have a number of board games on the floor to keep everyone busy .


Q& A session withthe Youth Birgade - 


Why did you keep this name ? Because we have created our menu in such a style that it can be eaten with a Spork  instead of a fork and a knife. And the meaning of Spork & Spoke is CHIT CHAT OVER FOOD





How do you manage to keep the prices so low ? Well the prices we buy our material is  the same that everyone else buys it at .. just that our overheads are low and secondly we are in a students zone so we have to be easy on the students pockets . 

Whats the funda behind Spork & Spoke ? Concept: quirky name, with lively ambiance providing fun to the guests with the board games,books & make them #YoungAtFood with a passionate team being head by kunal and Hitesh with a mix of rock, retro ,deep house, commercial Hindi with a touch new Hindi and English music

Who do you dedicate this adventure too? Hitesh : Arjun Abbi sir , he is my mentor and i owe everything to him . Kunal : My Mom , she is an inspiration .

Tigers Overall Experience : YES !!!! the Youth Brigade is taking over .. this lot is passionate educated experienced and adaptive .. they have caught  the pulse to make Spork & Spoke the buzz of Satya Niketan. The college kids connect very nicely with the food the ambience , the service , the owners .. absolutely value for money place and that is what shocked me . How were they keeping the food cost so low while the industry is crying about the rising prices . The food is totally their style , home style recipes .. big portions , chatpata , ful of flavors .
