Tigers Experience - Dimsum Bros Chefs Table


The honor of being at the Chefs Table is an experience never to be missed . The Chefs table is a great opportunity for the man who sweats it out behind the scene to please guest in all shapes and sizes , he handles more rejections than appreciation from the guest , its human nature to find faults but to show gratitude or even recognize the talent of the man and his team behind the scene - Seldom . We need to change this and start appreciating ALSO . Each chef has a different hand , food taste different from every hand , all chefs are masters of their skills hence know as chefs - they not only cook but they show their aptitude and passion in whatt hey do through their skills . Tiger was witness to the same at Dimsum Bros in Gurgaon Ambi Mall . Dim Lighting , Candles , host to greet you and guide you to your table , center kitchen divided horizontally one side kitchen the other side is the well stocked bar . The bar side is mre like a  hangout lounge for a perfect Saturday evening .



I love their name Dimsum Bros ...  it says Chinese Fine Dinning and now i know why - they have some of the best wines in stock , they make amazing cocktails and have a well stocked bar . Each dinsum is handcrafted  LOL obiviously  hahahahahaha. Well being a pukka punjabi always thot Dimsums were only ment for starters - nah nah  They Make a Full Complete Meal -lesson learnt . Shared a few moments with the chef who explained to me how to judge a good dimsum - Wrapper , Filling , Steam  which brings out the flavors of the ingredients and presentation .

(This was inventive  - Crab and laksa combination- had the tinge in it and the flavor of the famous Laksa)

(Black Bean Flavor is always a hit with me - well steamed fish covered with the sauce is yum)

(Yummy perfect pastry filled with delicious pork in a tangy sauce )

(To me the best dumsums and the best meat is always Pork , so juicy )

 In between we had some duck wraps which the host Ajay insisted on making and servng pyar se - leaving aside the fact that you cant match the shredded duck to the traditional wood fired duck - the rolls were excellent flavored the plum sauce bang on )

(This reminded me of beef Bulgogi  -super)

(Just had this one new dish with steam rice - really good fresh crunchy beans with garlic )

The basic concept of Dimsum Dinning is to serve small portions so that you can try a wider variety of meats ,flavors , sauces in Dimsums.  And Dimsum Bros did that well they kept my mouth on the toes LOL

Let me tel u a secret - started with one full dimsum , then half , then quarter  then just smelt and then just saw the filling and assumed the flavor LOL .


Four type of sauces to go with the Dimsums - Didn really need them - the dimsum had their unique flavors to relish.

Overall a great experience of flavors , inventions , Attentive  friendly team who know their stuff , super concept - and a beautiful display of talent by the chefs , Dimsum Bros is definitely a place to sit back relax enjoy your drinks , cocktails and the chain of fresh Dimsums - No Hurry food . 

Trust me we need to get away from the Momo school of thought and get into understanding DIMSUMS - they are quite different from the Tibetan momo's.   from Wiki : While dim sum (literally meaning: touch the heart) was originally not a main meal, only a snack, and therefore only meant to touch the heart, it is now a staple of Cantonese dining culture, especially in Hong Kong. Superbly brought to India by Dimsum Bros and managed by Ashish and and Ajay .

Tigers Experience of Mini Mughal - Gk 2



Tigers Experience of Mini Mughal GK - 2  , I remember going to Jor Bagh to eat in this small restaurant , i also remember people going mad about its food specially BC and brain . The restaurant had a die hard list of patrons who had to eat once a week at Mini Mughal . 

But todays was Chef and Us wala experience - Sunday Afternoon and it was only us and the Team of Mini Mughal atthe restaurant hahahahhaha , wonder why ? Anyways doesnt bother us - we had a super duper meal like always . 

Sirke wala pyaaz and Chutney - awesome - very seldom do u find sirke wale pyaaz so authentic -means nice soaked and not just colored with beet root - small soft khtata and fresh - the mint chutney was one of my favorites amongst the many u get at the kebab places .



The Number ONE Butter chicken  - i keep drifting between Moti Mahal and Mini mughal - the flavor is almost the same - except moti mahal has more visible tomatoes in it - both made in Amul Butter - but delicious to the core - chaat te rah jao ge . Please have the bone wala not boneless - the use semi tandoori chicken and that why it taste so cool.



I have this bad habit of ordering Gobi Aloo at all these places - get scolded by everyone also but i never give up - i just love the fried gobi aloo like they serve in the weddings lol - but but this was disappointing - bland and it was supposed to be gobi aloo masla . Actually wasted my time ordering it .


Ah!  Tawa brain masala - actually the best had so far ...  nice tomatoe and pyaaz ka masala - brain was fresh and soft 


Butter Naan - butter dripppeeeeeedddd all the way to my plate hahahahah nothing can really go wrong with a Butter naan. 


On the side we ordered a Daal Makhni also which actually was really nice - after a long time had a good daal makhni - pictures we not allowed to be taken by a irritated family  LOL 



Over all experience of food was awesome - empty restaurant scares me , loos wet , staff well turned out , food fresh and delicious . Guess a take away wud be better .

 Been travelling on the MG road to Gurgaon and back for years and have always had the urge the craving the need for a cuppa chai or coffee but belive me there was none on the way  sadly .  Always wondered by Barista  or CCd didn open a shop on MG road which has such high traffic – besides a kathi roll place there was actually no place for a Chai Break .

Couple of days ago a funny thing caught my eye – a buss or a truck on a wall – hahahahha , I actually stopped and wondered if someone was opening a playschool or something hahahahahaah very nice made with an actual tyre , windows, Driver wala door  etc etc . I said wow some sweet shop is coming up like a typical agarwal sweet , then I thot maybe the man who owns the farm got inventive and is opening a puncture shop , I just kept getting curious .
In fact the client I was visiting wanted to get inot  food truck invasion concept , and I told him bhai sahib lets open some snack shop on both sides of MG road . The man said ahh  nahi chalega nahi etc etc – idea shelved

Then on another day  while driving down to gurgaon for a client meeting who wanted to open a restaurant I saw a sign called “nashta paani” –  and that made me curious and I said must stop by . Which I did but there was nothing happening there . (BTW I recommended Chai Paani to my client)

Last evening while we were coming back from a meeting we decided to definitely stop by “Nastha Paani “   we did . Very take away type of a menu – Alooo Puri , Poha , Sandwiches , rolls , salad But no tea Coffer I went Eh!!! Whats going on . Anyway made a bit of a noise – saw this young lady inside and asked her for tea – she stepped out of the truck and said we don’t serve tea coffee as yet but for you we shal make it – I jumped of rthe offer – now that she was being kind I said might as well order something – so amongst the three of us we ordered – Chicken Cheese roll (spring rolls with thai sauce ) we had something totally diff in mind – a bit disappointed , a chicken n cheese sandwich – which was yum  served with potatoe wedges and cole slaw salad (which cud be easily avoided ) and and and – I saw an omelet listed on the menu – inventive bulb cam alive child hood memories cam back and I asked the lady if she can do us a omelet sandwich wut kachhi bread butter and ketchup , She said Sure – Wowo weeee  - in the head the questions started soming – dog u have just had lunch , idiot what wuill wife say on reading this – supposed to be on a diet – haahahaha but tiger is tiger guts hain bhai – we ordred . I tell you it was the most amazing omelet sandwich I have had in years – the egg cooked perfect not rubbery with onions and chilies - perfect , the bread edges trimmed fresh , lil bit of butter and ketchup -   overall maza aa gaya .

So while the chai was being made – got chatting with the owners – she was from IHM Bangalore , her other partners were also professionals from different fields . It was nice to see new blood getting into food business as a perfect team , we need this definitely and specially on MG road  – The concept as per them is to order while u r closing in on the place (Located next to sultanpur metro station on the left if coming from gurgaon to delhi ) and they will keep you packet ready = the menu has Rice with Rajma ,Kadi , chole ,  Wraps of all kinds , Poutine – this was surprising to find ,and other hot finger snacks like chicken lollys , fish fingers, Poha  etc etc hahahah I found a spelling mistake also for which I troubled them like school children .  


Overall – Much Needed on MG Road , have told them to let me open on the other side also – food quality is good  – slightly expensive, increase portions and  am  concerned about the hygiene factor  and yes also about my CHAI Coffeee. The Chai Arrived . Good place to visit – please must try . They are open 7 am to 8 pm .All Seven Days.

Was an honor to be a part of one India's Leading Gourmet Clubs Anniversary Celebrations  at the World Famous Indian Accent Restaurant at the Manor Hotel Friends colony New Delhi - Managed by Old World Hospitality.

Official Time 8 pm  to Greet and Meet with snacks and wine flowing . 9 pm to be seated for dinner , yes we did actaully sit down at 9.15 and continued eating till 12.30 LOL

The Dinner : Seated with 35 Gourmands was an experience each more knowledgeable than the other - the only connect we had in common actually was that we were members of the prestigious club . 

Sat down for dinner with 3 other food trail buddies - full of laughter and greediness .

Menu divided between a Vegetarian and a Non Vegetarian section - but being a greedy punjabi wanted to eat both the sides , and did manage it also .

The evening started with an amazing sophisticated of Pumpkin and coconut in shot sized cups = delicious the mixof both the flavors and texture very evident - on shot and we were done with it .I actually love Indian Accent for Surprises , combinations , research, fusion .




Then comes up on stone plate Nadir curma ,daikon and lal pyazz - basically lotus stem shredded  with a dressing = normally u find people slice lotus stem in circles but this one was cut in long stips very interestingly done - crisp wafer and a nice daikon - a jap mooli hahahah with a tangy dressing , eaten very sophiticatedly as the chef was roaming around , so manners tiger manners .




Next Shredded Kolhapuri chicken salad with avacado Koshimbir -O teri . Fresh salad mixed and eaten as instructed by Chef Manish himself - with a tinge of kolhapuri masal chilies - nice cruch , also tired the veg version eggplant instead of chicken one bite and ran away lol  tasted nice but kuccha baigan na na ,


Break

Nimboo Pani Kulfi Sorbet , Champagne - Palate Cleanser ,my dish of the day ,if im allowed to call it a dish - what a combination - refreshing bubbly - super fusion - wonder who found this combo .


wait wait the main course is coming up slowly slowly ....


Baked Khandavi cannelloni , pulled kathal in karonda chutney ( Cranberry ) - yaar this chef does magic - pulled kathal wow the iveggy imitation of meat - beautiful falvor - a winner simple dish





Steamed Fish ,Ambi Panna reduction - simple simple simple lovely mango ambi flavor with the steam lil fishy  nice


Break - Cleanse your Pallates please more to come - hey bhagwan


Anar and Churan Kulfi sorbet - wah remebered school days of chooran .





Dal Moradabadi ,Jodhpuri chur chur naan with fresh pesto - Yaar kamal hai the daal on its own was so so delicious had a toping of crunchy bhel /chaat type khata meetha dressing , we actually licked the bowl to the end  the chur chur ka paratha with pesto - was not really taken into account till they got us a garam wala  hahahah see the greediness coming out - or lets put this way the chef recognized a true foodie table lol - but yes it was a nice fusion .


Bas Yaar


Nah and here comes Daal Ghost , Indian Accent signature dish -  wil put up a pic of the same beautifully plated in a deep bowl one ball of meat with a brown tangy gravy with some lacha on top - mix it all up and u had a kiler on hand .

Tawa Duck Khurchan , Methi Aloo Rassa - i want to try this once again to getyhe flavowrs  so no comments - Acha we asked for the veg version also - it was Masal Dhood Makkai , bhutte ke kees - whatever uit was was fab  hahah  tired tyoing and itiered eating also .


This was served with wasabi Curd raita - wjich was ok ok  and Indian Accent famous Kulchas - pumpkin and mushroom this toh had to be eateb come what may LOL


And yes  to out suprise the chef made some amazing lolypop s-  choclate and coffee very cool

Desert time  Chefs Desert Platter - Misthi Doi , Dhohda , rum Ball  - had one bite and ran real far lol



BTW on the Side was Galouti Kebab / Spare ribs and amazing Kulchas 


Kudos to Manish , Shantanu ,Samrat for managing Indian Accent , will always love you guys for the magic you create .




and it didn end here there was an awesome chocolate cake for the host to celebrate their anniversary -  soh bhi khaya .

Tigers Experience of Udaipur



Tigers  Gastronomic Experience of UDAIPUR - 
tried to do everything in three days LOL - Udai Vilas , Lake palace ,Natraj , Ambrai - the winner was Udai Vilas for sure . ok here goes step by step


Natraj first meal - disappointed - they dont serve the authentic rajasthani Thaali for some reason - guess its the second generation which is making the changes - the place is amazing 1000 thalis a day and this is what i call fast food . The gujrati Daal was the winner - Yes clean hygienic for sure , wanted to check out the kitchen but was stopped by the owner dunno why - the amazing part was that all the waiters were bare feet and the floor was spotless - when asked why - the young owner said his dadajee always said that a guest at home shud always be served with bare feet as a part of the respect to the guest  , hence the same is followed here too .






Ambrai - Touristy . Beautiful location on lake pichola and thats its - Dont eat just grab a drink and retreat .Very touristy , beautiful view of the Hotels and the palaces - perfect for romance .



Supposed to be Laal Maas - burnt flavors fo the masalla.

Special AmBrai Chicken 



Taj Lake palace -  The Lake palace is like being on a cruise . Boy the experience is something after the hype they have created - permission to go there , id check ,cover charge - were all the hurdles we went thru before the GM called and invited us over - awesome boat ride . The food made by Chef Manish joshi was great - he did magic . The sad part is that everything out there is show business ,thanks to the frequency of celebrities to the property  Awesome place to visit and spend a evening - we personally wud not stay der - every room smelt of dampness . Very gordy or as they say over opulent . The Food pure Rajasthani Commercial . The Ambiance awesome .













4. Trident - this is really funny , landed in Udaipur escorted to Udai Vilas saw the menu got a fright ran to trident to eat - ordered the most disastorus meal ran back with a dilema , now what to do ? Hahahahaha - eventually gave into the Udai Vilas hospitality and enjoyed the food .

UDAI Vilas - here comes the king - till our visit we had a fixation about Taj being the best in hospitality - man Oberoi beat them hollow - every aspect of our stay was luxurious - the food - Deep Mohan Singh Arneja created magic and did not leave anything to convince us about his culinary skills - each dish was crafted . hats off to you deep .
6. BEDLA house - Had the pleasure to meet one of the members of the Royal family mr Vijay singh Bedla who are the originators of Laal Maans and khudd cooking - so much respect , so much affection - so Royal i must say - they made us sample the lla maans and also the Bedla suace - the family never discloses the secret behind the fab taste - if in Udai pur u must call them and have a meal with them .

 This is the Ecstasy of eating a Eggs Benedict perfectly made - Its the drool .

What i missed mentioning was the Special invite by the Royal Family of Bedla - an amazing experience - the y made us taste the Laal Maas which as per them has been invented by their family , and the guy who made it his name was Laal hence Laal Maas . Then they have a signature bedla suace - which is a reduction of several masalas and preseved for years to mature - yes one drop of it and the dish was a killer . Their hospitality was outstanding - i got scared actually with so much politeness . 


NET NET Udaipur has more temples than most of the cities in India , people are very nice , the city is small can be covered in 20 mins , the weather weas better than Dilli - The FOOD was wonderful and worth every pound that we oput on - The Hospitality of Rajasthan was DIVINE and calling us back .
